For this month’s Food Truck Tuesday we are highlighting The Peached Tortilla. Since September of 2010 this mobile kitchen has been serving up delicious sliders, burritos, tacos and foods topped with fried eggs and delicious sauces ever since. Owner, Eric Silverstein, draws his menu inspiration from experience as a kid living in Tokyo and later in Atlanta, GA. Two completely different regional palates combined to create his dishes now also infused with Texan flair. Menu items range from Pad Thai and Chinese BBQ to brisket grilled cheese and banh mi burritos. This streetside vendor is catching on so quickly that a brick and mortar shop is in the works. Until then, the two trucks can be found rotating around Austin along with pop-up dinners and catering options.
